water, with shear, MCC forms a three-dimensional matrix comprised of
millions of insoluble microcrystals that form an extremely stable,
thixotropic gel. Avicel microcrystalline cellulose functions at any
temperature and provides superior freeze/thaw and heat stability to
finished products.
