Lycopene is a bright red carotenoid responsible for the color in tomatoes, and other fruits and vegetables, such as red carrots, watermelons, guava and papayas.

As a colorant, lycopene is used to impart a range from orange to red hues in a wide variety of food applications. Lycopene is usually sensitive to light, but FMC has developed color formulations that show good stability towards light. FMC Lycopene colors are stable to all pH range and have excellent thermal stability
